I saw a half turkey breast in Trader Joe's awhile back and it put me in the mood for a full blown turkey dinner. The great thing about a half turkey breast is that it doesn't take long to cook and you don't have massive amounts of leftovers.

I combined a lot of herbs, some honey, olive oil, and Dijon mustard for a marinade and let the turkey soak in those flavors overnight.  I have prepared a turkey breast in the crock pot before, but this time I wanted a crispy browned exterior so I decided to bake it. I got just what I wanted, juicy white meat on the inside with a golden exterior.

You can't have turkey without mashed potatoes so check out my recipe for Red-skin Herbed Mashed Potatoes and Balsamic Green Beans with Caramelized Onions would also make a great side. Here is my cooking strategy for any given week - cook enough on Monday and Tuesday to have leftovers for Wednesday and Thursday. It doesn't always work out like that, but sure is nice when it does. When I made this Chicken and Quinoa Lasagna bake it definitely made my week easier.

I first saw this recipe over at Domesticate Me Food Blog which has great recipes and usually has me laughing out loud when I have time to read the posts. Who doesn't love a good casserole? And it contains quinoa so it's automatically super healthy, right? I only made a few adjustments, like leaving out the mushrooms (for obvious reasons), adding some red bell pepper, and using reduced fat cheese.

The end result is a yummy casserole that you can probably get even picky eaters to try and you'll have leftovers for the week.

Don't worry, just because May is nearing it's end, this doesn't mean the end of salad posts. Summer is just around the corner so I'm just getting started!

Chances are, if you cook a turkey you are bound to have leftovers. I roasted a small half turkey breast (which I'll be sharing the recipe for soon) and we ate off of it for days. But, it makes great leftovers and protein option for salads. Leftover chicken or pre-cooked turkey breast will work just as nicely.

This salad is pretty straight forward, but I decided to get a little fancy with a homemade Cranberry Vinaigrette. Hopefully my posts this month have inspired you to get creative and eat more salads.

I'm really excited about my photo background from Erickson Woodworks you see pictured. It was a "gift" (I picked it out and ordered it - haha) from my husband for our Anniversary. This is their Distressed White and the other side is Shabby Chic. It was so hard to make a selection - I seriously want one of everything!

Cranberry Vinaigrette

You can't have an Oven Roasted Turkey Salad without cranberries. Or in this case, a cranberry vinaigrette. 

Once all the ingredients have been blended together, you will have a naturally colored salad dressing that's a pretty pink. The dressing has a nice tang from the the cranberry juice and whole grain mustard with a hint of sweetness from honey and fresh squeezed orange juice.

It's getting warm out there folks. I don't know about you, but I try to use my oven as little as possible during the warmer months. So when you want a cheesecake inspired dessert but don't want to heat up your kitchen give this recipe a try.

The only baking required is for the crust which only takes about 10 minutes. The pie is then constructed with a layer of banana and a cheesecake filling made from Pineapple and Coconut Greek Yogurt, cream cheese, crushed pineapple, and coconut sugar. Then it's topped off with toasted coconut.

Black & Blue Salad

Would you look at the size of those blackberries!! And they taste incredible too - I nearly ate the entire package in one sitting.

So, this isn't your typical "black and blue" salad but I love the taste of blue cheese on a salad, especially when fruit is involved. Cut this recipe in half for a side salad or add a protein like navy beans, chicken, or even steak for a more heartier meal.
