Asian Turkey Meatballs and Zoodles

I finally used my Paderno Veggie Slicer to make Zoodles and they were great! You make these quicker than you can boil water for pasta. Simply cut the zucchini, heat some olive or sesame oil over medium-high heat and sauté the Zoodles for a few minutes with some finely chopped onion, garlic, salt and pepper.

Meatballs
1/4 cup panko crumbs
1-1/4 lbs 93% lean ground turkey
1 large egg
1 tbsp ginger, minced
1 clove garlic, minced
1/2 tsp kosher salt
1/4 cup chopped fresh cilantro
3 scallions, chopped
1 tbsp low sodium soy sauce
2 tsp sesame oil

Sauce
3 tbsp reduced-sodium soy sauce
1 1/2 teaspoons sesame oil
1 1/2 tbsp fresh lime juice
1 1/2 tbsp water
1 scallion, chopped

Combine all meatball ingredients and mix well with a fork. Use a 2 Tbsp. scoop, gently shape meatballs and place on a greased baking sheet. Bake for 12 minutes at 500°F. Combine sauce ingredients and spoon over cooked meatballs.
