Black Bean Salad with Zesty Lime Dressing ||

My husband is always open to trying new dishes but he could eat the same thing everyday and be satisfied. This also means he's not very helpful when I ask what he wants for dinner. So when I ask, I'm at least guaranteed an answer of "biscuits and gravy or tacos". His two favorite meals. Nothing wrong with that - he has survived on worse after all. However, if I ask what he would like for lunch this black bean salad has surprisingly been his answer many times. 

Black Bean Salad with Zesty Lime Dressing ||

This salad is simple yet refreshing and satisfying. Lots of flavors and textures with a zesty dressing to top it off. I like to eat this on a wrap but it could also be served over a bed of lettuce or with a side of tortilla chips. We have taken this on outings, fed a group of people, and packed lunches with this. Don't let the summer pass by before trying it.  

Black Bean Salad with Zesty Lime Dressing
Makes 6 servings 

1 15 oz. can black beans, drained and rinsed
1/2 English cucumber, diced
1-2 ears corn, kernels cut off
2 jalapeƱos, seeds removed and finely chopped

2 green onions, thinly sliced
1/3 c. Cilantro, chopped
1 avocado, diced
2 Roma tomatoes, chopped

Combine all ingredients in a large bowl.

Roasted sunflower seeds

Zesty Lime Dressing
3-4 limes, juiced
1 Tbsp. Chili powder
1 tsp. cumin
1 tsp. granulated sweetener
1/2 tsp. ground coriander
1/2 tsp. salt
1/2 tsp. black pepper
2 Tbsp. Olive oil

Whisk all ingredients together and refrigerate.
