I have a  new favorite creation. If you know me well, then you know I have a weakness for any food that is Southwest/Mexican inspired. Take for instance this, this, or this. I never seem to get tired of these flavors. 

This recipe was loosely based on my Veggie Loaded Meatloaf but with other flavorful goodies added in. I was worried it would have too much flavor for my 1 year old but he gobbled them up. I love cooking food for people that I can experiment on!

As an added bonus, these meatloaf cups are super cute. Sure, you can serve the sweet potatoes on the side but it doesn't take much effort for the extra step of putting them on top. If you don't have a pastry/icing bag you can simply fill up a ziplock bag and cut one of the corners off to pipe the potatoes out

Southwest Turkey and Sweet Potato Meatloaf Cups
Makes 12 meatloaf cups (updated 1/13/15)

Southwest Turkey and Sweet Potato Meatloaf Cups ||

  • 1 tsp. olive oil
  • 1 large zucchini, grated
  • 1/2 c. Red onion, diced
  • 1/2 c. Red bell pepper, diced
  • Salt/pepper
  • 1-2 cloves garlic, minced
  • 1/2 c. quick oats
  • 1 egg
  • 2 chipotle peppers in adobo, minced
  • 1/2 c. Cilantro, chopped
  • 1 Tbsp. Chili powder
  • 1 tsp. cumin
  • 1/4 tsp. salt
  • 2 Tbsp Barbecue sauce
  • 1 lb. ground turkey (93% lean)

In a skillet heat oil over medium heat. Then add zucchini, onion, and red pepper. Season to taste with salt and pepper and sauté for about 5 minutes. Then stir in garlic and cook 1 minute more. Remove from heat.

In a large bowl combine remaining ingredients then stir in cooked vegetables, mixing everything thoroughly. Divide mixture among 12 muffin cups coated with nonstick spray. 

Bake at 375°F for 30 minutes.

Mashed Sweet Potatoes
  • 4 c. Sweet potatoes, peeled and cubed
  • 1 Tbsp. Unsalted butter
  • 1/4 c. Almond milk
  • 1/4 c. Plain Greek yogurt
  • 1 Tbsp adobo sauce
  • 1/2 tsp cumin
  • 1/4 tsp salt
  • 1/4 tsp black pepper

While meatloaf is cooking prepare mashed sweet potatoes. In a large pot bring water to a boil, add sweet potatoes, and cook 10 minutes or until softened. Drain potatoes and place in a mixing bowl. Add remaining ingredients and use a hand mixer to blend until smooth.

You can serve this on the side with the meatloaf cups or fill a pastry/icing bag fitted with a star tip with potatoes and pipe out onto meatloaf cups. Garnish with a cilantro leaf.
