This spruced up side dish is just what your next grilled piece of chicken or fish needs. This is where the Balsamic Vinaigrette comes in that I posted about last week. If you haven't already made a batch, don't worry it doesn't take long at all.

I was recently asked by a friend if I had a good recipe for green beans. I was like, "Uh, no not really."


I've always liked green beans but struggle to get them seasoned right. In short, this concept was my suggestion so I decided to take my own advice and make an official recipe.

While vegetables aren't my husband's favorite, he still eats them but always saves them for last. Seems kind of backwards to me but whatever. When I made these green beans, they were the first thing to be gone off of his plate. Yes, they are that good.

Makes 6 servings

Ingredients:
  • 1 lb. trimmed, whole fresh green beans
  • 1 c. sweet onion, thinly sliced
  • 1 Tbsp. Earth Balance Organic Whipped Buttery Spread
  • 1 tsp. sugar
  • 1/4 c. Homemade Balsamic Vinaigrette
  • 2 Tbsp. slivered almonds, toasted

Directions

Bring a pot of water to a boil, add green beans and boil 8-10 minutes. Drain, return to pot and toss with Balsamic Vinaigrette.

In the meantime, melt butter in a skillet over medium heat. Add onions and reduce heat to medium low. Slowly cook the onions until tender, 10-15 minutes. Then stir in sugar and cook another 2-3 minutes.

Place green beans on a platter, top with onions and toasted almonds. Serve immediately.
