Bacon Apple & Cheddar Salad

Bacon Apple & Cheddar Salad ||

This salad has that salty/sweet/crunchy thing going on that really works. I made this salad by pure accident one day just using a little bit of this and that I had around so I perfected it for you all. In other words, I tried to make it look pretty instead of tossing everything together.

I like to add beans to my salads for protein because it's really easy. I usually drain and rinse them which reduces the sodium content. If beans aren't your thing add whatever protein you prefer.

Bacon Apple & Cheddar Salad
Makes 1 serving

Bacon Apple & Cheddar Salad ||

  • 4 c. baby spring mix
  • 1/2 Fuji apple, sliced
  • 1/4 c. cucumber, sliced
  • 1/4 c. canned navy beans, rinsed and drained
  • 1/4 c. diced 2% reduced-fat cheddar cheese
  • 5 cherry tomatoes, quartered
  • 2 slices center cut bacon, cooked and crumbled
  • 1 Tbsp. raisins


Place spring mix on plate and top with remaining ingredients.
