Black & Blue Salad

Would you look at the size of those blackberries!! And they taste incredible too - I nearly ate the entire package in one sitting.

So, this isn't your typical "black and blue" salad but I love the taste of blue cheese on a salad, especially when fruit is involved. Cut this recipe in half for a side salad or add a protein like navy beans, chicken, or even steak for a more heartier meal.

Makes 1 serving

Black & Blue Salad ||

  • 4 c. loosely packed baby spring mix
  • 1/4 c. thinly sliced red onion
  • 1/3 c. thinly sliced cucumber
  • 1 tbsp. Homemade Balsamic Vinaigrette
  • 1 tbsp. balsamic vinegar
  • 1 tbsp. crumbled blue cheese
  • 1/2 c. Blackberries
  • 1 Tbsp. Crunchy Salad Topping


Place onion in a small bowl with ice water for 3-5 minutes, then drain. (This helps them not taste so strong.)

Place spring mix, red onion, cucumber, vinaigrette, and balsamic in a large bowl tossing to coat. Place salad on a plate and top with remaining ingredients.
