Cranberry Vinaigrette

You can't have an Oven Roasted Turkey Salad without cranberries. Or in this case, a cranberry vinaigrette. 

Once all the ingredients have been blended together, you will have a naturally colored salad dressing that's a pretty pink. The dressing has a nice tang from the the cranberry juice and whole grain mustard with a hint of sweetness from honey and fresh squeezed orange juice.

Makes about 1 1/3 c.

Ingredients:

  • 1/2 c. all natural cranberry juice
  • 1/4 c. extra virgin olive oil
  • 1 Tbsp. granulated Stevia
  • 2 Tbsp. honey
  • 2 Tbsp. stone ground mustard
  • 1 Tbsp. Apple cider vinegar
  • Juice from 1 orange
  • 1/4 tsp. salt
  • Fresh cracked pepper to taste

Directions

Place all ingredients in a blender on high speed for 30 seconds to emulsify. Refrigerate.
