No-Bake Tropical Cheesecake

It's getting warm out there folks. I don't know about you, but I try to use my oven as little as possible during the warmer months. So when you want a cheesecake inspired dessert but don't want to heat up your kitchen give this recipe a try.

The only baking required is for the crust which only takes about 10 minutes. The pie is then constructed with a layer of banana and a cheesecake filling made from Pineapple and Coconut Greek Yogurt, cream cheese, crushed pineapple, and coconut sugar. Then it's topped off with toasted coconut.

Ingredients:
  • 1 sheet Pillsbury Refrigerated Pie Dough
  • 4 oz. fat-free cream cheese, softened
  • 4 oz. 1/3 less fat cream cheese, softened
  • 1/4 c. coconut sugar
  • 3 - 5.3 oz. Chobani Simply 100 Pineapple Coconut Greek Yogurt
  • 1 - 8 oz can fancy crushed pineapple, drained and squeezed dry
  • 2 medium bananas, sliced
  • lemon juice
  • 1/2 c. unsweetened coconut flakes, toasted
  • 2 Tbsp. fancy flake sweetened coconut

Directions


Prepare pie crust as directed on package for a Baked Shell (ice cream or pudding) and cool completely.

Toss sliced bananas with lemon juice and layer in bottom of prepare pie crust.

In a medium bowl, with an electric mixer blend cream cheese and coconut sugar together. Then add yogurt and blend until smooth. Fold in pineapple. Spread evenly over top of ban


Combine the coconut in a small bowl and sprinkle evenly over top of pie. Refrigerate 3-4 hours before serving.
